Ingredients:
- 1/4 cup olive oil or butter
- 1 cup finely diced onion
- 4 cups baby spinach, chopped
- 2 (6oz) jars of artichoke hearts, drained & chopped
- 4 tablespoons Mermaid seasoning (or your favorite seasoning blend)
- 2 teaspoons black pepper
- 1 teaspoon salt
- 16 oz cream cheese, diced into pieces
- 8 oz pepper jack cheese, small diced or grated
Directions:
- Sauté the onions: In a large skillet on medium-high heat, add your olive oil (or butter) and diced onions. Sauté for 10-12 minutes, stirring occasionally, until the onions are tender and sweet.
- Add spinach and artichokes: Next, add the chopped spinach, artichokes, Mermaid seasoning, salt, and pepper. Sauté for another 5-7 minutes, just until the spinach is wilted and all the ingredients are heated through.
- Add cheeses: Turn off the heat, then add the cream cheese and pepper jack cheese. Fold everything together until creamy and well incorporated.
