Mellow Yellow Coconut Curry Recipe

Ingredients:
- 2 cans Chickpeas, drained
- 1 Onion, diced
- 4 T Tomato Paste
- 2 T One Love Curry or Hurry Yo' Curry
- 3-4 Carrots, diced or grated
- 1 can Full Fat Coconut Milk
- 1 T Maple or Honey (optional)
- 1 tsp Salt – or more to taste
- A big handful Baby Spinach
- 1/2 cup Water
Directions:
- Sauté the Onion:
In a medium pot with a lid, sauté the diced onion over medium-high heat for 5-6 minutes until softened. - Add Curry & Tomato Paste:
Stir in the curry seasoning and tomato paste, and cook for another 5 minutes, stirring occasionally to release the flavors. - Add Liquids & Chickpeas:
Pour in the coconut milk, water, and chickpeas. Add the carrots, maple syrup (or honey), and salt. Stir well, then cover and cook for 10-15 minutes, allowing the flavors to meld. - Fold in Greens:
Turn off the heat, then fold in the spinach. Cover the pot and let it sit for an additional 5 minutes to allow the spinach to wilt. - Serve & Enjoy:
